Czech national cuisine is not the healthiest one, but there is hardly someone to refuse trying one of the dishes. Modern recipes have the tendency to be healthier but all the same the cuisine is based on old culinary traditions (the food is high in calories, fat and sugar). It is a stable tradition that Czech meal always starts with the soup. There is a wide variety of soup recipes. Bramboracka (potato soup), Cesnecka (garlic soup), chicken noodle soup, beef soup with liver dumplings, sauerkraut soup, dill soup, made from sour milk and others.
As usual meat and a side dish make the main course. The locals prefer to eat chicken, pork or beef, with a definite sauce. Fish is not very popular, but salmon and cod are sometimes cooked. Like many other nations the Czechs choose potatoes like a side dish. It can be boiled, roasted or mashed, French chips are also cooked. Butter and whipped cream are often used as main ingredients of the desserts, among which blueberry dumplings, ice cream, Medovník (honey cake). National beverage is beer, which accompanies every meal.
